Change the Proxy

I am aware that we are able to open as many Epic Privacy Browser instances as we wish, however I would like to know if there is a way to have a new proxy on each instance instead of the same proxy being used. Each instance I open is using the same proxy. I have tried to turn off the proxy and turn it back on but it keeps the same proxy as the first instance is using.

Yes, at this point, every instance/window/tab will use the same proxy server.  Though if you close/re-open Epic, it may switch to a different proxy server.
