With the proxy turned on, every "What is my IP?" site returns my actual location. What is the proxy doing if my IP is still trivial to acquire?
As for the extensions, I completely understand why you would not want to include them all, but certain security based extensions are pretty useful. Here are a couple that I think improve internet security. If I am wrong, please let me know:
Last Pass - Generates complex passwords and auto-fills forms.
HTTPS Everywhere - forces url requests to be SSL
Tor Proxy - ensures tunneling through tor

Many websites of what is my IP show cached IP addresses. With a couple of refreshes, you should get your changed IP address.
