"Click to disable proxy globally" button.

The one in the top corner.  Should that be green or red?
Also, can epic stop a company from tracking emplyee web activity?

It should be green. Epic stops any trackers or cookies that are installed by any company.
You should make sure once you are done,  you quit the browser.

If you're on our proxy, your company generally won't be able to track your web activity.  BUT plugins especially flash which is used when you watch videos online can leak your ip address/websites you visit to your employer, so do be careful if you're watching videos and want that activity hidden, it may or may not be if you're using flash.  You can in the settings set Plugins to click-to-play.
