There is no setting that I can find. It is relatively easy to just click on the proxy button and you have 8 choices.

Sorry I misunderstood! Try preferences and reset Epic, if that doesn't work remove the extension and then reinstall.

For user flexibility, Epic now allows extensions from the Chrome Webstore to be installed.  We strongly recommend users enable Epic's Ad Block and VPN / Proxy which yes are no longer enabled by default.  It takes a few seconds. 

Go to the extensions page in Epic:  chrome://extensions/

Then simply enable both extensions.
