Disable your Adblock for the page and exit the VPN. Clear browsing data and reload.
Only create a new folder if you have different or new subjects I.E. weather, games etc. It is true that when you select "bookmark all open tabs", the bookmarks mgr. automatically creates a new folder.
You can open the bookmark manager and move your bookmarks to the appropriate folder by dragging URLs to the named folder.
When you save a bookmark under "Bookmarks" use the "bookmark this tab". A dropdown box will appear giving you options of "More" which will give you a list of folders and giving you the option of putting your bookmark in the appropriate folder. You can also edit the title if you wish.
If you click under the "Epic" toolbar you can also import your bookmarks from your other browser I.E."and perhaps save some effort.
If this doesn't help, repost or clarify your question as I am basing this on MacOS 11.2.3 Big Sur. I hope this helps.

Also wondering where it is being downloaded I.E downloads, if it's in applications or not? Did you disable adblockers and try?

Try this, on MacOS this worked quite well.
I ran into this issue also on the windows version, mac seems to work though. I found that the option Settings>Downloads>Ask where to save each file before downloading is preventing the extension installer popup. So you may have to temporary allow downloads without permission to allow the extension to install. This is how I was able to get the extension to install.

Delete the folder if you wish if it has EPIC or Hidden Reflex in it and change the download location I.E. applications etc. See if that works.
Then re download your version of Epic. Good luck.
In windows there is an uninstaller I believe.
Just search in the forum "uninstall Epic"as I believe there is a post from Alok to confirm the veracity of my tip.
In MacOS just drag the icon to the trash. I hope this helps.
